Fish head soup - said to be good for lactating women
Clean fish head.
Bring a pot of water to a boil and drop in the head. Allow the water to return to a boil and then add ginger and onion.
Simmer until the heads are well cooked. Remove fish head and add vegetables or tofu to the soup if desired. After ladling soup into bowls season with black pepper and vinegar.
The fish head contains a lot of meat, eyeballs, etc which can also be picked
apart and eaten along with the soup.
This is all that remained of the two fish heads after the meat and edible parts have been eaten.
Fish heads can also be steamed and eaten.
Create a mixture of salt and pepper and rub the fish head with it. then put
in a steamer with a thin covering of ginger and onions. Steam until the
eyeballs turn white. Then eat.
Tendon
Cut up tendons and cook in slow-cooker with green onions and ginger. You can use beer for cooking liquid. Cook overnight.
Tendons can either be eaten hot or the tendons and the liquid can be allowed to cool and gell.

The above picture was taken when visiting
relatives in Kunming, Up above Vietnam. Our
relatives in Kunming treated us to a local
variant of the hot pot. It contained poisonous fungus (They said,“Don’t
worry; after boiling for half an hour it becomes edible.”), a
quartered leatherback turtle, and various local
vegetables. It was very good when washed
down with a mixture of Chinese white
liquor (bai jiu) and turtle blood. You can
see the little red wineglasses with the blood liquor mix. We also had bai jiu
with the turtle gall. That was a pretty green color.
